BBQ Tips and Taste Testing

When it's this hot outside the last thing you want to do is turn on the oven! So why not have a barbecue? Grillmaster Chris Melfa, co-owner of Kirby's Grill and Bar is here to give grilling tips for your at-home BBQs (he should know, when he's not cooking at Kirby's, he can be often found grilling up some treats at Yankee stadium for the team after their games!)

1. Make sure you season all your meat at least 15 minutes before cooking. Weather its with sauce or spices give the meat time to marinate before throwing it on the grill to ensure maximum flavor.

2.  For the best taste use a charcoal grill. Give the grill at least a haf an hour to get to the proper temperature. 

3. Cook larger steaks and chicken on a lower heat so it doesn't burn on the outside and stay raw in the middle. 

4. Use a thermometer to know your meats are at your desired temperature. 145= medium rare. 150= medium. 155= medium well and 165= well done.

5. Add hickory chips on top of your charcoal to add a nice smoky flavor to your BBQ.
